Saviah Cellars: Une Vallée 2007

TASTING NOTES:    Our Une Vallée is a classic Left Bank Bordeaux-style blend that begins with powerful scents of baking spices and subtle floral notes with a hint of blueberries. It is a full-bodied wine that offers layers of seductive ripe black cherry and black currant flavors with supple, silky tannins. The finish is smooth and lingering, and very satisfying. To enjoy all this wine has to offer, please cellar for at least 6-12 months…or 5-7 years if you can wait!

COMPOSITION:    57% Cabernet Sauvignon, Pepper Bridge Vineyard
   36% Merlot, Seven Hills Vineyard
    7% Cabernet Franc, Stillwater Creek Vineyard

FERMENTATION:    Small open top stainless steel tanks. The cap was punched down three times per day. Free run juice was transferred to French oak barrels to complete fermentation.
