Saviah Cellars: The Jack Lot 25

TASTING NOTES:    This wine has aromas of black cherries, raspberries, plum and spices with a touch of oak. The layers of silky red and black fruit are framed with seamless tannins and a long beautiful finish.

COMPOSITION:   88% Merlot - Seven Hills Vineyard, Walla Walla Valley;   Canoe Ridge Vineyard and Preston Vineyard, Columbia   Valley
  12% Cabernet Sauvignon - Pepper Bridge Vineyard, Walla   Walla Valley; Candy Mountain Vineyard, Columbia Valley

FERMENTATION:    Small open top stainless steel tanks. Inoculated with a Saccharomyces cerevisiae species after cold soaking. The cap was punched down two times per day. The wine was transferred to American oak barrels to complete fermentation.
