
The Chardonnay vines come from Pirque, in the heart of the Maipo Valley, at 700
meters above the sea level. It is as well, at that very same altitude, that grow our most traditional and oldest vines.
These vines are clons imported directly from France by Mr.Fèvre and characterized by its purity.
Chardonnay from Alto Maipo has always reveal elegant and fruity wines. Thus we wanted to concentrated the most those
characteristics producing a late harvest wine with this variety, but modifying the traditional characteristics of this kind
of wines. We obtained a fresher and nicer wine.
Harvest was done during the middle of May (we got the name from that) waiting for the maximum of aromas and flavors
concentration.
Winemaking Process:
Once the grapes from the Chardonnay vines are delicately harvested, the fruit is carefully selected at the Winery and then
pressed entires.
This process involves pressing the entire bunches very gently. Then the juice is fermented in French oak barrels, new and 1
or 2 years old, for a period of 30 days at 14-21°C. There is no malolactic fermentation.
After the wine is macerated during 4 month, moving them once per week to extract all its body, unctuousity and aromas, process
known as "battonage".
Tasting note:
The aromas of La Misión May Harvest Chardonnay 2006 are floral and fresh. This wine
presents notes of dry apricots, honey and melon. Opposite to the traditional late harvest wines, it presents a smooth mouth
with a moderated residual sugar balanced with a juicy acidity.
It invites quickly the next glass.
Excellent as an aperitif or with dessert.
