Vineyard location: Lujan de Cuyo, Mendoza.

Age of the vineyard: 30 years old on average

Alcohol: 14,5 %

Yielding: 45 hl / ha

Grapes: 100 % Cabernet Sauvignon.

Harvest: 4th April - 19th April.
Canopy cut-back and green harvest in December. Manual harvest in 20 kg trays in order not to damage the grapes. Painstaking sorting, performed by hand prior to vinification, assures the best grapes.

Bleeding: 15 %

Fermentation: With indigenous yeast in order to preserve the optimum expression of the "terroir" at controlled temperature of 26 °C. Pumped over four times per day and extended maceration period of 30 days.

Ageing: 30 % of the wine was aged in French oak barrels for 12 months. Final clarification with fresh egg whites.

Drinkable: 5 years

Tasting Notes: Intense ruby red color. True varietal character with hints of ripe red fruits. Full bodied, delicate and complex palate with round finish.

Food Recommendation: With grilled meats, rich dishes

Cheese Recommendation: Cheeses like Camembert, Cantal or Pyrénnées.
